Rosso vermouth 1cl
Lemon juice 1.5cl
Sugar syrup 1cl

How to make?
Add all ingredients to a shaker with ice and shake. For a richer, more voluminous foam, strain the drink and shake it again without ice. Strain the drink through a fine sieve into an ice-filled or coupe glass. Garnish with raspberries and enjoy!
As an alternative to raw egg, you can also use aquafaba, the liquid leftover from canned chickpeas.
Instead of fresh raspberries, you can also use raspberry jam, raspberry marmalade, or raspberry syrup.
